Ingredients for making Ox Mocotó with vegetables:
For the mocotó broth:
500 grams of mocotó (ox leg)
1 coarsely chopped onion
2 bay leaves
For the mocotó broth with vegetables:
2 tablespoons of olive oil or vegetable oil
1 chopped onion
2 chopped garlic cloves
2 ripe tomatoes
1 chopped pepper
1 cup of baked beans
1 pepperoni sausage or smoked bacon
2 peeled and chopped potatoes
1 chopped carrot
1 black pepper to taste
salt to taste
cilantro or chives to taste
How to make Ox Mocotó with vegetables:
First, know how to prepare ox mocotó: start by soaking the mocotó with water until covered, the juice of 1 lemon and 2 tablespoons of vinegar for 2-4 hours, in order to eliminate the unpleasant taste. After that time, drain and rinse the mocotó pieces.
Tip: if your mocotó has a lot of dirt, rub it with a soft brush and rinse it before soaking it as indicated.
Boil the mocotó in a pressure cooker, covered with water, for 10-15 minutes without covering. Discard this water and re-cover the mocotós with filtered water. Now add the salt, chopped onion and bay leaves, cover the pan and cook for 1 hour after taking the pressure.
In the end the flesh and skin will be separating easily from the bone, as in the photo. Pass the broth through a sieve and set aside. Discard the bones and, if desired, chop meat, skin and cartilage into smaller pieces.
Tip: this mocotó broth is rich in nutrients and can be used as a base for preparing various soups and broths! Use it in place of filtered water.
In a pan with olive oil or oil, saute the onion and the chopped garlic cloves. When the onion is tender, add the chopped tomatoes and peppers and cook for 2 minutes, stirring so as not to burn.
Then, to make this beef mocotó broth with vegetables more flavorful and nutritious, also add a pepperoni sausage or chopped smoked bacon to the pan. Let it cook, stirring occasionally, until golden.
Finally add the mocotó meat, the vegetables (beans, potatoes and carrots) and the broth from the mocotó cooking. Cover the pan and cook for 20 minutes in a normal pan or 10-15 minutes under pressure (counting after pressure is applied). Finally, get the flavor right by adding salt and pepper to taste.
Tip: if you prefer a thinner mocotó broth, add the beans with your cooking broth. The broth from the mocotó cooking should be enough to cover all the ingredients, if not, add a little hot water.
Finish the dish by adding coriander or chopped chives and serve your mocotó soup with vegetables very hot, with bread or toast. Enjoy your food!

What is the ox mocotó?
The word 'mocotó' comes from the quimbunda word 'mukoto', meaning 'animal paw'. In this case the mocotó is the name given to the ox's feet.
The current Brazilian mocotó is a dish of very remote origin. There is no certainty as to the people who created the original mocotó recipe, but we know that the traditional Brazilian mocotó is inspired by the Portuguese recipe of hand of cow à jardineira.
In the 19th century, mocotó was served as the first meal of the day, as it was very nutritious and economical, as it was prepared with shanks of cattle that went to slaughter.
